Tasting notes :
- Ruby purple color.
- Intense and characterful on the nose with aromas of cherries, blueberries, cassis and pepper, but also herbs, cedar wood and graphite in a long and persistent finish.
- Concentrated and fruity on the palate , with a soft and silky texture. Elegant tannins and concentrated fruit.
- The grapes are harvested, destemmed and crushed by machine. The must is then pumped into a fermentation tank and inoculated with selected yeasts. During fermentation, pumping is carried out openly and the temperature is kept at 28°C for around 15 days. Pressing occurs when the required amount of color, flavor and tannin has been extracted. The pressed wine is stored separately. Malolactic fermentation usually occurs naturally. The wine is stored in French oak for 6 months.
